Tastes Like-
A naturally processed coffee boasting a cup score of 87, this single origin, single variety (red catuai) is one of our favorites. Our relationship with Ixil spans nearly 10 years and we are so excited to see it grow. This coffee is fragrant with tropical fruits, and reps notes of mango, cherry, marzipan and milk Chocolate.

Ixil Borter-Torrez (center) is a 4th generation farmer and dear friend in Matagalpa Nicaragua.
She and her family produce many great coffees including the Naturally Processed Red Catuia we have come to love over the years!
Nestled high in the Jinotega region of Nicaragua her farm is a simple yet steep sloped 7 acres bustlings with life! Shade grown and producing many other fruits to help create a healthy eco system she takes delight in producing some amazing coffees and caring for the land and the locals with love and compassion.
Fun Fact-
This year (2026) we took a trip to work with her on developing some fun new experimental coffees including a kombucha inoculated anaerobic and a watermelon co-ferment honey processed coffee. We are stoked to see what continues to transpire over the years with this budding little farm!
